Hello! I’m Amber, Founder and Chief Executive Nosher at Knocked Up Noshing! I spent most of my career in brand marketing, primarily consumer packaged goods. After my twins were born, I started thinking about what I was passionate about and what I enjoyed learning about. A personal struggle with infertility and constant battle with my weight factored into my decision to go back to school to study nutrition. I just graduated and am now a Registered Dietitian!
I started this blog for a few different reasons. I want to explore the link between diet and reproductive health, and I want to share that information with you. I truly believe that healthy moms and healthy babies go hand in hand. If my sharing nutrition information and healthy recipes results in a least one more person enjoying a healthier meal or making a healthier choice, then I will consider this blog a success.
I’m also hoping (maybe a little selfishly) that the blog will help me to start cooking more and to find ways to incorporate more fruits, vegetables, lean proteins, and whole grains into my diet as well.
I live in suburban Milwaukee with my husband, twin daughters, and a malti-poo named Cookie. Some of my hobbies and interests include collecting cookbooks, decorating cookies (probably not the healthiest hobby I could have chosen), and traveling. I’m also an airline frequent flyer mile & hotel point junkie! 🙂
